DR. EVIL'S "HARD ROCK" RAISIN AND NUT BREAD

 

1 round loaf

 

1 cup water                           

2 pkts.  yeast                          

2 cups unbleached wheat flour         

1 cup whole wheat flour                

3 cups stone ground wheat flour        

1 cup milk      

3 Tbsp. sugar                          

2 tsp. salt  

2 Tbsp. shortening  

1 cup dark raisins

1 cup white raisins  

2 cups chopped English Walnuts

1 egg  

 

Heat  water to 105 degrees or so. Mix in half teaspoon sugar  and yeast. Let  stand  while proceeding. Plump raisins by  simmering  in a little water in a frying pan on top of stove. Drain well and let cool. Scald milk and pour into large heavy mixing bowl. Add and mix rest of sugar. Bowl  should cool milk and sugar mix to working temperature. Melt shortening. In another bowl, mix well the flours and salt.

 

Add water and yeast mixture and melted shortening to milk in large mixing bowl. Stir in raisins and chopped nuts. Mix in one cup of flour mixture and let stand 15 minutes. 

 

Work-in enough flour mixture to make stiff dough. You may not use it all. Deposit dough onto floured kneading surface and knead in enough flour to develop a non-sticky dough. Round it into a ball. Wash mixing bowl, dry and coat inside with small amount of shortening. Place dough into bowl, roll it around and turn it over so that surface is coated. Cover and let rise 45 minutes in warm place. Punch down, remove and knead again for 5 minutes. Round into single large loaf and place onto greased and floured cookie sheet. Cover with plastic wrap and let rise again for 45 minutes. 

 

Mix egg with 1 Tbsp. water and coat loaf  entirely with hand. Preheat oven to 375 degrees. Bake for 50 minutes on a center rack.
