SY'S OLIVE BREAD

The Night Before:

The Biga

1 cup bread flour
1 cup water
½ tsp. instant yeast

Mix, cover and let sit overnight

The Olives

12 Kalamata olives, pitted and sliced in half
1 tsp. minced garlic
1 tsp. salt
1 tsp. thyme
3 Tsp. olive oil

Marinade olives overnight.

Next Day:

The Dough

Biga
5 cups bread flour
1 tsp. salt
Olive marinade
1 – 1 ½ cups water
2 tsp. instant yeast

Knead all ingredients, except olives, to make a smooth dough. Place in oiled bowl and let rise until doubled in size. Punch down, incorporate olives, and shape into round loaf. Let rise 1 hour longer and bake in 425 degree oven until done - about 35 minutes.
