          MRS. EVIL'S COUSCOUS SALAD

- a great low calorie salad

Couscous is burghul (cracked wheat), called bulgur by the Turks. It is particularly popular among Armenian communities scattered all over the world. While many couscous dishes such as those of Morocco, Tunisia and Algeria are cooked, this one, for the salad, is uncooked. 

Serves 6 to 8 as entrée - 12 to 15 as side dish

Serve with Pita Bread

Soak overnight 1 - 17 1/2 oz. box of uncooked medium grain couscous. Cover with water after first rinsing in sieve. Do no drain off the water the next day.

Next day, ad the following:

1 bunch green onions, chopped fine
1 peeled and chopped medium to large tomato
1 1/2 to 2 bunches fresh parsley (Italian flat leaf), chopped fine
1 med. to lg. onion, chopped fine
Optional: 1 lb. seasoned, cooked, peeled, and chopped shrimp
  and/or   1 can garbonzo beans
  and/or   Black olives

Blend: 3/4 cup olive oil, 1/2 cup fresh lemon juice, freshly ground pepper and 1 to 3 tsp. salt (to taste)
Pour over and mix into salad mixture and serve. Store in refrigerator.
