BANANAS FOSTER

Serves 4

½ cup firmly packed brown sugar
¼ cup butter
4 ripe bananas, each cut in half and then lengthwise*
dash of cinnamon
½ cup light brown rum
|
¼ cup banana liqueur
1 pint quality vanilla ice cream

* It is important that the bananas be quite ripe. Green bananas do not lead to edible Bananas Foster. 

Melt the butter and brown sugar in a large skillet. Add the bananas. Sauté until soft. Sprinkle cinnamon over the bananas. Heat the rum and liqueur in a small saucepan. Pour this over the bananas but do not stir. Carefully light the liquor in the pan with a long stick match and keep spooning the sauce over the bananas until the flames die. Scoop the ice cream into four bowls and immediately spoon on the bananas and sauce.
